Why does the chocolate coating of the Crispy Shark have waves, while the one of the Kit Kat is very smooth?

People always have a craving for sweets from time to time, but my cravings come quite frequently... Recently, I've fallen in love with chocolate wafers. The chocolate is very sweet, while the wafer is slightly bland. When you take a bite, the two flavors blend together, creating a balance between sweet and bland, which is to say sweet but not overly sweet. This is exactly the highest praise we Chinese give to desserts— not too sweet!

Then I made a discovery: how come the texture of the crispy shark and the Qiqiao is different? One has a wavy surface, while the other is as smooth as a mirror.

I find this discovery quite interesting, and the production process is also very representative, so I want to share it. Perhaps you can use it to interrupt the kids while they are eating chocolate wafers...

Crispy Shark Production

First, let's look at the more common production of crispy shark, which is actually just a cream wafer with an added chocolate coating.

Cut the finished wafers into suitable sizes, and then it's time to coat them.

Neatly arranged, they are sent for a hot chocolate bath. Let the chocolate fall!

From right to left, the wafer, originally covered in chocolate, now has only a thin layer left, completely revealing the grid pattern of the wafer.

In the production of Orion pies, there are also similar steps.

But why is there a coating on the bottom as well? Oh! Long time no see, my soul drawing!

In short, in the end, we get a piece of chocolate wafer that is snug but not flat. I imagined that if I licked all the chocolate off the sides, wouldn't it be a "sandwich 'sandwich'" cookie? The wafer is filled with sauce, while the chocolate layer is filled with wafer, a nesting doll!

  

Qiqiao Production

Now look at Qiqiao, the logo on top is so clear. There’s no doubt it’s molded.

First, let’s watch an animation demonstration. The white part below is the mold, which has four grooves, representing four wafers. But the ones I bought only had two wafers.

Then it enters the factory, where a certain amount of chocolate sauce is injected into the mold to create a base.

Then, the pre-cut wafers are pressed in.

Next, another layer of chocolate sauce is poured on top to completely cover the wafers. Excess chocolate sauce is scraped off. I know, I know, the chocolate is not excessive; this step is the one that is excessive!

A board of connected chocolate wafers, this side has no logo and will still have some wafer grid patterns.

After solidifying and demolding, you can see that the chocolate surface with the logo is very smooth.

After packaging, our chocolate wafer is complete~

Compared to eating crispy shark, Qiqiao has a breaking process. If it breaks particularly evenly, I feel it would make people more satisfied... It shouldn't just be my obsession, right?
